From sous vide to marination, a commercial kitchen vacuum can provide many benefits to a Maryland, Virginia, or Washington, D.C. foodservice operation. Vacuum sealing your foods can increase quality, help with moisture retention, and even reduce the potential for cross contamination. But there's more.

Henkelman Logo

Henkelman is the leading supplier of commercial kitchen vacuum sealing. With its new marinating option, Henkelman claims to create better marinated food options that are more flavorful in a shorter period of time. To underscore this point, they performed a series of tests to support this claim.

SAMPLE TEST

The test marinade consisted of 1/4 cup of vegetable oil, 1/4 cup water, and 10 drops of blue food coloring for both samples. The first sample chicken breast was placed in the marinade for 24 hours in a refrigerator. The second chicken breast went through through a five-step marinade process on the Henkelman Lynx 32.

PHYSICAL RESULTS

After 24 hours, the two samples were compared. These photos show the second sample that went through the Henkelman marinade process is more fully coated with a richer color than the chicken breast that was placed in the refrigerator.

IN A SHORTER AMOUNT OF TIME

With just 10 minutes in a Henkelman vacuum packer, a better result is achieved when compared to 24 hours in a refrigerator. This is a game changer for commercial kitchens throughout Maryland, Virginia, and Washington, D.C. Chefs can produce in minutes what would normally take hours, if not days.

In reality, though, the results are even better. Consider the fact the likelihood for cross contamination is essentially eliminated, and chefs can be assured of safety, as well as quality.
