Much like the frame on a fine painting, the way you show your items can bring people in and even help increase the perceived value and price point. It can increase the likelihood of impulse purchases. And, ultimately, the right foodservice display case can help turn food into fortune. It starts with a great design. Over the past decade, we've seen a massive shift in the types of display cases foodservice operators are using, with trends reflecting high-end Italian designs, jewelry-case styles, and a move toward top-of-the-line glass that provides a wider range of visibility into the actual case. Let's walk through some of the important questions to answer when selecting the right foodservice display case. Curves or Lines? Some foodservice display cases have sharper, more angular design elements that can resemble jewelry displays in a department store. Using this style for foodservice is great because it elevates viewing food products to the ways in which we look at gold and silver. Angular displays can also work great in particular types of restaurant or café designs. The other option is smoother and more rounded glass. This can increase visibility and make food displays more approachable. Decide which design elements work best before selecting a display case. Cold or Ambient? For certain types of food products like bread and pastries, a foodservice display case that holds products at ambient temperatures is desired. In other cases such as chocolatiers or gelato shops, having cool or frozen cases is desired. Deciding what is being served out of which particular case is one of the first things to determine. Also consider whether menu options will change, and consider cases that add that flexibility in the future. Consider Configurations Lastly, once the refrigeration question is answered, how should the case be configured. Things to consider are aspects like lighting, shelving, and signage. For example, in the fall when seasonal items like pumpkin are popular, consider adding signage and highlighting those items within the case.
