For many of you, when you think of commercial cooktops, you think gas or electric. I’m here to tell you why you should consider a “not-so-new” technology, induction cooktops, and why Panasonic’s are the top of the line.

Panasonic’s new Met-ALL Commercial Induction Cooktops are incredibly powerful pieces of equipment coming in at 3500 Watts. For those of you unfamiliar with induction cooking, it uses electromagnetic energy to directly heat the pan. This essentially eliminates the need for the middle man, which are the coils used in electric stoves and the flames used in gas stoves.

Because of their portability and the lack of need for a hood, induction cooktops are commonly seen in hotels, buffets, country clubs, pretty much anywhere you would go for brunch. Despite their portability and overall convenience, they are super powerful and fit in perfectly in a commercial kitchen. Here are the top three reasons that you should consider a Panasonic Met-ALL INDUCTION cooktop for your commercial kitchen:

1. **Time**

Induction cooktops can heat your pans in 25-50% less time than traditional electric or gas cooktops. The electromagnetic energy goes strictly from the cooktop to pan; there is no middleman. By eliminating the flames and electric coils, the cooktop only needs to heat the pan reducing the amount of time needed for the pan to get to the right cooking temperature.

1. **Control**

With new, heavy-duty, metal-clad pans ranging in price from $50 to $200 per pan, this new technology can save you a lot of money.

By investing in the Met-ALL Induction cooktop you will save time, which is invaluable in a high-volume restaurant; you will gain improved control over the temperature, and you will be able to use the cookware that you have already invested in.

Pricing for this unit is comparable with similarly powered and featured models, however you have the great benefit of not having to buy new pans to use with this induction cooker. As previously stated, the Panasonic Met-ALL Commercial Induction Cooktops can be used with iron with stainless steel pans, iron sandwiched pans, aluminum layered with copper pans, and aluminum and copper pans on their own.
