The process begins with market-fresh ingredients – herbs, vegetables, fish, meat, or fruit. Then, in three simple steps, chefs can transform these ingredients into a more elevated final product:

Step 1: Prepare & Fill - Simply prepare the fresh ingredients by cutting them into pieces and adding liquid.

Step 2: Freeze & Store - Freeze the prepared ingredients for at least 24 hours at the specified temperature.

Step 3: Pacotize Individual Portions - When ready to serve, pacotize the frozen ingredients to create ultra-light mousses, nature-fresh ice creams and sorbets, aromatic soups, sauces, and fillings – all without thawing.

Pacotizing enables chefs to 'micro-puree' deep-frozen foods, preserving their intensive aromas, natural colors, and vital nutrients in ready-to-serve portions.
